How To: Swirl caramel fudge
Learn how to pour and measure so you always end up with perfectly textured and deliciously flavored fudge.
Caramel heating times may vary based on the wattage of microwave ovens and amount of caramel needed in the recipe. Follow recipe instructions in your Fudge Manual.
Never overheat or boil caramel; let it melt gradually.
It’s OK if the caramel isn’t evenly poured onto the fudge.
Try to blend the caramel so swirls will appear on every piece of cut fudge.

Swirling caramel is a time-sensitive process, so before you start, melt the caramel in a microwave according to the recipe instructions and have it ready to pour.
Pour the desired amount of fudge into a pan lined with a pre-cut pan liner.
Pour the caramel in an “S” pattern back and forth across the short side of the pan along the entire length of the pan.
Insert a Setterstix paper stick in the corner of the pan and pull the stick back and forth horizontally across the long edge of the fudge to create a swirl pattern.
To create a random swirl, drag the Setterstix paper stick quickly across the swirled fudge in a figure-eight pattern.
